Mystic River Resort - How Green Are We?








I was asked recently to define "Green" and how I thought we fared in our "Green Strategy". Here is our answer!

HOW GREEN ARE WE??

Being “Green” is not something you buy or a club membership! It is a way of looking at your total needs and how they can be met with the least impact on the environment. The land we chose for Mystic River Resort was based on the river and the vision that we had for a Jungle resort. There were no utilities at the site, no water, no sewer, no electricity, no telephone, and no internet. This was going to greatly increase the cost of building the resort but there was also great opportunity there to be different, to not become another power consumer. The design of the resort is such as to have a much lower impact on the environment.
The first thing that was done was to clear the land of the underlying brush, not with a bulldozer but with 12 men using machetes. We started calculating our electrical requirements and designing our utilities system. We looked at solar power but encountered several problems, like the mountains around us limiting the amount of sunlight, all the trees which were still standing and the fairly high amount of rain during the rainy season! This meant that even with solar power we would still need to have a generator!


So we designed a very efficient system using a low emission generator. The generator we chose meets the USA EPA standard AND the State of California standards. In Belize, you can buy and use generators that do not conform to the above standards! Over the last 10 years the amount of emissions coming from a diesel engine has been dramatically reduced. Our system was designed with enough batteries so we only need to start the generator from around 7am till around 11am and in the evening from 6pm to 10pm, a total of roughly 8 hours per day. That takes care of all our usage for washing machines, cooking, etc.. With our inverter system we still have electricity for the entire 24 hour period. We also made sure the system was enclosed in a building that would minimize noise pollution for our guests and our neighbors.

Once our next phase is complete, we should be able to add some solar panels on the roof of our new office. And why not some wind mills.......For now, we think we came up with a very good system!

• Our units have masonry walls and the roofs are a combination of wood and clay tiles which minimize the transfer of heat during the day. We also designed the units to fit in between the trees which gave us additional protection from the sun.

• Our water is pumped from a deep well while the generator is running, then stored in a tank further up a hill. When released it give us a 50 psi water pressure which is fabulous for our showers!

• We purchased eco friendly hair dryers to put in our suites, when we realized that our guests were bringing theirs which were far from eco-anything! Our hairdryers only use 1kw per usage to generate more heat than a regular hairdryer, and since they have a ceramic heating element rather than coil, the radiation being emitted is 5 mG rather than 200 mG, which you will find in regular hairdryers! I am the wash and wear type of person and Tom has very little hair on his head, but my kids use hairdryers all the time!


• Our organic garden is producing pretty much all the vegetables we require on a daily basis and what we do not have we purchase at our local market. We are dedicated to providing our guests with the highest quality, most wholesome fresh vegetables we can. Our laying hens are prolific when it comes to eggs and growing our own chickens has made a huge difference in the quality and taste of the meat we serve in our restaurant. All our chickens share in the kitchen leftovers giving us absolutely fabulous bright yellow egg yolks that taste just amazing!

• Garbage is a big issue in Belize in that we do not have recycling facilities and very little garbage removal. And so it becomes up to each individual to determine how they will dispose of the garbage that they generate. We generally do not purchase any prepared foods, so packaging is not so much an issue in the kitchen but it is for everything else! We chose not to purchase and serve any drinks that would come in a plastic bottle, so Diet Coke and a couple of others were banned from our bar! We are sure that our guests do not mind doing without for the few days they are with us. Unfortunately, a lot of items come packaged in plastic containers, so we had to come up with a system designed to minimize the amount of plastic ending up in the dump. We gather all our plastic containers on a regular basis and take them to the border with Guatemala where recyclable facilities exist. Cans get crushed and all our kitchen leftovers get split between our many pet friends on the property!




• We closed a very unsightly illegal dump on our local road, which had been in use, so we are told, for many years. It took quite a few days to clear all the garbage which ran into a creek providing water to some villagers and we eventually put up a living fence (the posts are made of tree trunks which will grow back into trees) and a few signs asking people to please use the government approved dump instead. I am happy to say that we have had a very good response from everyone. We also started a “Keep a mile clean” project where local operators purchase a mile of road to keep clean of debris. It works!!


• Our septic system is a miracle in itself!! It is an aerobic sewer treatment system that meets and exceeds the standards currently required by Belize. The water, after being treated, is then placed in waste water gardens where we have grown beautiful flowers which we use for our landscape.

• When we have heavy rain showers, the runoff water is channeled into catch basins and holding tanks in order to prevent silt from being taken into the river.

These are some of the things that we believe keep us "Green"! Let us know if you can think of anything else.

So what's new at Mystic River Resort....

We have added quite a few horses to our stable, and we now have six beautiful steads to take our guests horseback riding AND, we were able to reopen the fabulous trail to Sapodilla Waterfalls!

Tom has been busy maping out more trails around Dancing Tree and many of our guests have enjoyed the amazing scenery from the top. We are also discovering many more Mayan sites on the property and of course tons of pottery shards....








We have also made a few changes to our website and added various packages, but we have also used photographs that some guests have sent for us to use. I was asked by some of our guests to provide a couple of recipes from our kitchen so here goes:

Green Thai Curry Sauce
1 coconut milk, 1 tbsp green curry paste, 1 onion, 1 eggplant, 1 tbsp soy sauce, 2 tbsp sugar.
Sautee everything together then blend!

Corn Salad
2 cups fresh corn, chopped tomato, sweet pepper, cilantro, onion, cucumber.
Dressing: lime juice, salt and pepper.

Lemon Ginger Chicken
Panfry the chicken breast with lime juice, garlic, mayonnaise and ginger. Salt and pepper to taste.

Cilantro Pesto
¼ lb cilantro, ¼ cup walnuts, 1 cup parmesan cheese, 3 tbsp olive oil, 1tbsp garlic, 3 tbsp lime juice, ½ cup water, salt and pepper to taste.
Blend everything together.

WHAT'S NEW AT MYSTIC RIVER RESORT.....

Green News from our Garden....

After many years spent growing vegetables at another location, we were fortunate to have Mr. Martinez join our team. He started our organic garden and is now supplying our kitchen with fresh produce everyday. There is nothing quite like the feeling of eating fresh lettuce knowing that it has just been picked a few minutes ago!!

Apart from leaf lettuce, we are currently growing green peppers, tomatoes, cauliflower, brocoli, spinach, zucchini, cabbage, radishes, along with various herbs, including fresh mint which we are now using to make our deliciously refreshing mohitos! Our kitchen waste is now divided between all our "pets" and the rest is composted under the watchful eye of Mr. Martinez.


Our 40 laying hens have been busy working overtime to produce some excellent eggs for our kitchen, and our younger guests have had lots of fun chosing some for their breakfast!
We are now also able to supply our kitchen with a constant stream of free range chickens.




And in our efforts to minimize garbage, Tom has built us a can crusher, which he was happy to demonstrate for this newsletter!!


News from our Units.....
Riverview Suite #11, Purple Heart, is nearing completion and should be available for the Christmas season. It has a separate bedroom and living room and we cannot wait to have our first guests stay in it! Pictures will be available when the unit is finished....

News from our trails...
Come join us at "Sunset Point", a beautiful new area on the upper side of Mystic River Resort, where you can admire the amazing colours of sunset.


There is something to be said for "leaving stuff behind"! Some of our past guests have left behind shoes or other items they no longer want, shoes mainly, and being the "rat pack" that I am, I never throw things away! Well it recently paid off very well! A young couple staying with us were due to go to the ATM Caves and we found out they had no close toed shoes which could be a bit of an issue. So we went to the "goody bag" and we tried on some shoes and sure enough we found a pair for each one of them that fit very nicely thank you very much! And to give credit where credit is due, thank you Jong and thank you Ellie. We could not have done it without you!

Next, some words about Hurricane Richard....
As you probably all know by now, Belize was hit by a small Category 1 hurricane named Richard. The brunt of the storm landed in Belmopan, our capital, where the winds did some major damage. A lot of trees were laying down, either uprooted or broken and Guanacaste National Park looks like a ghost park now, which is truly heartbreaking. Power lines and poles were down alongside the road to Belize City and a lot of homes are still without power and some without roofs! Our beloved Belize Zoo suffered much damage and will be closed till the end of November. However, all the animals are safe and accounted for!! We had surprisingly very little rain which in itself is quite a blessing.
At Mystic River we consider ourselves lucky that we had no structural damage, only broken trees and branches all over the place, and our guests splept soundly! We lost some pretty Prickly Yellows and Gumbo Limbos. Clean up is underway and we are happy to say that it is business as usual here. Here are some photos.





When all is said and done, we feel very fortunate that nobody was hurt and that all our friends and neighbours fared like us with no major damage, just loss of trees. But we all know that in the jungle, things grow fast and will recover quickly.

Tom and Nadege's Wedding, July 14th 2010

July 14th 2010 was a momentous event for Tom and I. We had decided to get married in Mexico to make it easy on all our family and friends, but we sure missed being at Mystic River Resort! Here are some photographs of our very special day that we would like to share with all of you. We hope you enjoy this newsletter. It's all about us!!


Our three grandchildren were quite a sight and all smiles for our big day.





















Our daughters, Jennifer, Stephanie and Jennifer were absolutely georgeous! My Dad got to walk me down the sandy isle. Merci Papa!!

2nd Newsletter - May 2010



This past year has seen some fabulous happenings here at Mystic River Resort. One of the most important, in my opinion, being the fact that Tom "finally" proposed to me!! The wedding is scheduled for July 14, 2010 in Playa Del Carmen, Mexico.






Late last year, we added a small conversational pool, the "Lilly Pool", to the list of activities available on site and have found it to be a wonderful spot for late afternoon cocktails and evening star gazing. And of course, the kids enjoy it too!


We also moved the construction/tool room area away from the Cabanas and relocated everything at the very back of the property. This has opened the area for landscaping and we think it makes a big difference to the entrance feel of the resort. We also have a brand new office along with a brand new office Manager, Gina Garcia.

Some of you may remember the story of the spa and the reason it was built! That was because Tom and I could not agree on where to put our house (I want it by the river, he wants the man cave up in the bush!!). Anyway, no, we are not building our house just yet! But we are moving to unit #11 so we can free up the spa for our guests hopefully in time for the Christmas season! That is pretty exciting news!


Tom has been very busy adding hiking trails to the topside of the property and the discovery of a couple of Mayan burial sites and home sites should make the walk even more interesting! The trails are also wide enough to accomodate the Polaris in the event some of our guests may find the hikes too challenging. And with the help of Tom's handy GPS, we now have all our trails mapped out.

We are now also using the trails for some amazing horseback riding adventures. We have added a couple of horses to our stable and are happy to welcome Coco and Precious to our family. And of course Red is extremely happy to have a girlfriend in his life!!

To add to our family of pets, we recently acquired 40 new laying hens to augment our egg production for the kitchen! Some of you may remember that back in November, we found an orphaned calf in a pretty poor shape towards the top of the property! We are very happy to announce that as of today, Rosebud, is doing very well and our guests have quite enjoyed feeding her! She has not only prospered but is developing quite an attitude but we love her anyway!

And last but not least, Tom and I would like to thank all of our guests, most of whom have become dear friends, for allowing us to share our little bit of paradise with you. By choosing to stay at Mystic River, you have made our dreams come true and we will be forever grateful.

1st Newsletter - August 2009




First Newsletter, August 2009


Hello everybody,

I wanted to take this opportunity to thank all our past guests for taking the time to come visit us. During the brief period we have been open we have made some lasting friendships. Thank you.



Warm Thanks also to Becky Good for suggesting we start a Mystic River Newsletter. Becky, I sure hope you send me those photos of our shopping trip to the Prison Gift Shop!!!




So, what’s new at Mystic River?

Tom and I have been busy and having fun visiting various local sites to see if we could organize additional trips and adventures for our guests. We recently spent a day at the Elijio Panti National Reserve because we had heard about the wonderful waterfalls there as well as the beautiful caves. We were not disappointed and what a day that was!! Tom actually wanted to drive his new BIG Dodge Ram 2500 truck all the way in, just to see if he could do it, and as you can see, we did it!







A couple of places on the way there were pretty scary because of all the mud, and the fact that the road had not been used for vehicles for quite a while, but we got there eventually! The truck ride lasted just over an hour, whereby taking the horses would have taken 4 hours! When we got to the end of the road we parked the car and hiked our way in the jungle to the entrance of the cave.

The cave is absolutely beautiful and full of artifacts. Here are some photos that you can enjoy. We were there for over an hour then headed back to the truck for the next part of our adventure, the beautiful Sapodilla Waterfalls.






After another 2 mile jungle trek, we reached the falls. Because of the heavy rainfall we received a few days prior, the water was a bit cloudy, but I understand from our guide, Antonio Mai, that the water is normally crystal clear. I guess we’ll have to make another trip!! The biggest surprise of the day for me was the sandy bottom of the falls!! It was so unexpected because the bottoms are usually rocky, but not this one! Swimming there was absolutely delicious, again because of the softness of the bottom, so I have to declare Sapodilla Falls my personal favorite so far. There are also medicinal trails there which unfortunately we had no time left to explore.






















We had such a wonderful day that we would like to make it part of the tours we offer our guests. It will be a combination of off-road adventure mixed with horseback riding, caving, swimming at the Falls with of course, a packed lunch or a barbeque right there at the falls!


I bet you can picture yourselves there right now and can't wait to try it out!




By the time we left, the sun was coming down.

It was truly another beautiful day in paradise, full of excitement and discoveries.
